Sushi Chef (Sushi Man)

About the role

We are looking for a skilled Sushi Chef (referred to as a "Sushi Man") to join our team in Brazzaville. You will be responsible for preparing, assembling, and presenting a variety of Japanese dishes, ensuring high standards of taste, hygiene, and presentation.

Key responsibilities

• Select and verify the freshness of fish and seafood.
• Prepare sushi rice, including cooking and seasoning.
• Filet, cut, and clean fish for various preparations.
• Prepare sauces and accompaniments such as wasabi and pickled ginger.
• Assemble sushi rolls, makis, California rolls, sashimi, nigiri, and other Japanese items.
• Plate dishes with attention to visual appeal.
• Maintain proper cold‑chain storage and product conservation.
• Clean and disinfect utensils and equipment after use.

Required profile

• Formal training in Japanese cuisine or equivalent professional experience.
• Minimum of 2 years experience in a similar sushi‑chef role.
• Strong knowledge of fresh Japanese ingredients.
• Ability to motivate and work well within a team.
• Detail‑oriented and vigilant about food safety standards.
